This is a great substitute for marshmallow rice krispie squares!
1 cup natural peanut butter (or almond or sunflower seed butter)
1/2 cup butter
1/2 cup honey
2 cups puffed brown rice cereal
pinch of sea salt
optional add-ins: chocolate chips, nuts, seeds, coconut, dried fruit
In a small saucepan, melt the peanut butter, butter, and honey over medium heat, stirring until well combined.
Put the puffed rice cereal in a mixing bowl with the salt. Add the peanut butter mixture (and any add-ins) and stir.
Transfer the mixture to a square pan and press down gently. Chill in the fridge for at least 20 minutes. When they are hard to the touch, cut into squares and enjoy. They will soften at room temperature, so best to keep them chilled until you are ready to eat.
