My friend, Jen, passed along this recipe. I’d intended to use it for Nate as we introduced finger food…but it turns out Dave and I love them, too.

All you need are 2 eggs, 1/2 cup rolled oats, and 1/2 cup cottage cheese.

Blend them together and cook them up on a non-stick pan.

Sometimes I’ll blend in some banana, too.

Serve with your choice of toppings–or tear them up for baby.
