When I was a classroom teacher I had a wonderful student teacher who was also a great cook! She introduced me to this delicious and nourishing bread that’s perfect in the Fall with a yummy soup!

2 cups spelt/kamut/flour of your choice

2 cups rolled oats

¼ cup wheat germ/bran/I use ground flax

1 tsp baking powder                              

1 tsp baking soda

1 tsp sea salt

½ cup molasses

2 TBSP melted butter or coconut oil

1 cup dried fruit

1 2/3 cup buttermilk (I use yogurt or kefir)

Mix dry ingredients. Add remaining ingredients. Mix well. Let stand in a greased bread pan for 20 minutes. Bake at 350 degrees for about 50 minutes. Remove from pan immediately. Makes a hearty meal or snack with nut butter, hummus, smoked salmon, pesto…the possibilities are endless.
