MORNING GLORY MUFFINS
Into a large bowl, mix:
2 cups brown rice flour (or spelt, kamut…)
1 ¼ cup raw sugar (I replace 1/4 cup with molasses for iron)
2 tsp baking soda
2 tsp cinnamon
Stir in:
2 cups grated carrot and/or zucchini
½ cup dried fruit (raisins, apricots, dates…)
½ cup nuts (walnuts, pecans…)
½ cup unsweetened coconut
1 apple peeled and grated
In a separate bowl, beat:
3 eggs
1 cup oil (or use a combination of applesauce and oil)
2 tsp vanilla
Stir liquid mixture into flour mixture until batter is just combined. Spoon into well greased muffin tins, filling to the top. Bake at 350° for 20-25 minutes.
